The kitchen of Berlin Cuisine has been my home for the last nine months, We decided our first project would be with Max (the owner) and Rio (the Head chef) from Berlin Cuisine. Max and his friend worked their way up in different Michelin-Star Restaurants in Berlin, before they decided to travel to Southeast Asia working in the best Restaurants. On their return to Germany they combined the inspirations discovered during their journey and their combined knowledge to establish Berlin Cuisine. Their reputation is quickly growing since they opened their doors to the public only two years ago. Berlin Cuisine combines fine Dining with event cooking. Their food reflects both the real tastes of Asia and of their home, Berlin.
The braised Ox cheek comes with a puree of cauliflower and fermented red bean and is complimented perfectly by fried cauliflower and a sauce of the Ox cheek and reduced Soy sauce. This dish is full of regional flavours with a touch of Asia.
